If you don't already have them on xbox/360, i'd suggest Morrowind and Oblivion. They've gotten pretty cheap. You'll likely enjoy Morrowind more than Oblivion though.

If you already have them, or don't like Elder Scrolls games in general, i also suggest Mass Effect... again, if you don't already have it on 360. I thought it was alright.
